Business Profile: Chloe Madison Creations, Mahopac

Michael Carroll is planning to open Chloe Madison Creations in Mahopac on Dec. 10.

Carroll said he named his new bakery after someone who has been his inspiration – his nine-year-old daughter, Chloe, whose middle name is Madison. Carroll said his daughter keeps him motivated. “She kind of keeps me going foreword,” he said last week. On the days he wants “to walk away,” his daughter pushes him to continue working on his business, Carroll said. “I do it all for her,” Carroll said.

Carroll is partnering with another Mahopac resident, Matt Camerino, to own the new bakery. Camerino is the owner of The Chophouse Grille, which is only a few businesses down from Chloe Madison Creations, which is located in the Route 6 Plaza shopping center. One of the reasons he chose his Route 6 location was its proximity to The Chophouse Grille, Carroll said.

“We’re going to do fresh breads, rolls, bagels, all your morning stuff – your muffins, your croissants, your scones, your Danish, specialty cakes, wedding cakes, birthday cakes,” Carroll said. “If it goes in and over we will do it.”  The bakery will also offer breakfast sandwiches. The new business will also sell a variety of other items, including cheesecakes, cupcakes, pies and tarts.

Carroll is still in the process of renovating his building, which was formerly a bagel store.

Though Chloe Madison Creations is the first business that Carroll has owned, he has been a baker since the age of 15. “My mom told me to get a job,” Carroll recalled. “So I went to the local bakery and was the counter help.”

Carroll received culinary training at the Putnam-Northern Westchester BOCES in Yorktown. After serving the United States Marine Corps Carroll attended the Culinary Institute of America for additional training. He subsequently baked at several establishments, including restaurants and hotels.

When the economy was in recession, Carroll did some construction work, but continued to bake for friends and family and did catering.  “I never gave up on it,” he said. Some of his current catering clients include the Crowne Plaza Hotel in Danbury, Ct and the Mahopac Golf Club.

Carroll and two employees will be doing the baking at his new establishment. “They do more of the decorating side of it,” he said.

Carroll has particular baking passions, “I love bread,” he said. “Bread is my thing. (And) cakes are fun.” He also enjoys baking French pastries.
